Ingredients
- 4 eggs
- 3 cups skim milk
- Baking spray
- 1 1/2 cup yellow cornmeal
- 1 1/2 cup sugar
- 1 1/2 tbsp flour
- 2 1/2 tbsp unsalted butter, melted
- 1 tbsp baking powder
- 2 tbsp vanilla extract
Directions
- Preheat oven to 350°F. Spray a 13"x9" baking pan with the baking spray.
- In a large bowl, whisk or blend together the milk, the eggs, the corn meal, the sugar, the flour, and the butter. Mix all ingredients until blended well (about 1 minute). Then add the baking powder and vanilla extract and whisk for a few seconds.
- Pour batter into prepare baking pan and bake at 350° F for 50 minutes or until golden brown. let Cool in pan for 30 minutes before serving. Cut into 20 pieces.
