Vanilla Cornmeal Cake

I tried this recipe this week and it's been my breakfast ever since. I love it, it's very easy to make and perfect to bring along to eat in the car if you're running late. It's not messy and doesn't crumbles. Try it, you'll love it too.

Ingredients
  • 4 eggs
  • 3 cups skim milk
  • Baking spray
  • 1 1/2 cup yellow cornmeal
  • 1 1/2 cup sugar
  • 1 1/2 tbsp flour
  • 2 1/2 tbsp unsalted butter, melted
  • 1 tbsp baking powder
  • 2 tbsp vanilla extract


Directions
  1. Preheat oven to 350°F. Spray a 13"x9" baking pan with the baking spray.
  2. In a large bowl, whisk or blend together the milk, the eggs, the corn meal, the sugar, the flour, and the butter. Mix all ingredients until blended well (about 1 minute).  Then add the baking powder and vanilla extract and whisk for a few seconds.
  3. Pour batter into prepare baking pan and bake at 350° F for 50 minutes or until golden brown.  let Cool in pan for 30 minutes before serving. Cut into 20 pieces.
